1 cup chopped sweet onion
1 tbsp olive oil
2 cups uncooked quinoa
1/2 tsp sea salt
4 cups chopped fresh cauliflower
5 cups water - (or vegetable broth if you like)

In large pot, put onion and oil and cook over medium-high heat, stirring, for 1 minute.
Add quinoa and cook, stirring, for 5 more minutes or until onion is transparent.
Then add salt, cauliflower, and 4 cups water, stir gently to combine, bring to a boil, then immediately turn heat to low and cover pot.
Cover and simmer until all water has absorbed and quinoa and cauliflower is soft.
Remove from heat and mash this mixture together with a potato masher.
Add more water a little at a time, as necessary to achieve a smooth consistency.
Yields 8 servings.
